One of the major changes that happened when I went vegan was I begin to eat more coconut. There are a ton of ways coconut just makes ordinary dishes come alive and taste amazing.
Before adopting this healthy, cruelty free lifestyle the only coconut I ever ate was in a cake like German Chocolate cake or other coconut cake recipes. Now I enjoy fresh coconut occasionally, drink coconut water often, and use it in a variety of recipes. I was looking for some new coconut recipes this week and found three that are amazing.
