As a child, my earliest experience with muffins was with my mother. She wasn’t using vegan muffin recipes but they were delicious.I was mesmerized at how she would whip up something delicious every week.
Vegan muffins are very tricky. I have tried several of the commercially produced vegan muffins but they haven’t impressed me. The texture was dry and the taste was passable. The key to most baking is found in things like eggs and dairy to get that texture and taste everyone is accustomed to. Of course as a vegan we are always looking for a better way.
