I rarely meet a fellow vegan that doesn’t love avocado. It is great in so many different vegan recipes. I like to put in on sandwiches, use it in salads, and of course who doesn’t love guacamole! In addition to being tasty, avocado is a great source of healthy fats.
Let me tell you that this vegan recipe lives up to all of your wild imagination and more. These avocado fries are crispy on the outside, creamy and savory on the inside, and when dipped in the Sriracha Mayo they are incredible. One of the secrets to this recipe is how it is breaded. Instead of something like bread crumbs this recipe uses shredded coconut. Not only does that make them gluten free, it also helps make them amazing! No way would I even think of trying bread crumbs.
When these things are hot out of the oven they will be irresistible! Don’t be like me and eat one immediately and burn your mouth. I recommend letting them cool. It will be hard but trust me, you can do it. Your biggest challenge may be keeping everyone else in the house away from them while you plate them.
You will need to make a couple of modifications for this to be vegan. Instead of eggs you can use a vegan egg replacement or flax egg. And instead of making the Sriracha mayo sauce, just buy the Sriracha Mayo from Just Mayo. Trust is, we know this recipe is not vegan as it is presented on the following website. But it’s such a great idea, and so easily converted to vegan we had to share it with you!
