BBQ “Chicken” Salad with Quinoa and Berries

If you’re like me then you probably ate salads before going vegan. And the ever popular chicken salad is always a favorite. After going vegan your salads add more delicious veggies, fruits and nuts which is awesome! But that chicken texture and flavor go away. I would never ever dream of going back to eating chicken. Ever! But thanks to companies like Beyond meat I don’t have too.

This vegan salad is just mind blowing. When I first saw it I had two thoughts. First, I must make this salad immediately! And then I realized I must share it immediately. So I did both. My sister was over for dinner last night and I made this salad and we were both in heaven.


It’s just absolutely amazing!. If you love strong bold flavors and a salad that isn’t boring then this is the salad for you. It’s very easy to make and is a complete meal by itself, no need to prepare anything else to get full and satisfied. You can get this amazing recipe on the next page.

BBQ “Chicken” Salad with Quinoa and Berries

This recipe was adapted from the original HERE by Diethood. Their site is just amazing and has a ton of beautiful recipes, mouth watering photos, and great meal ideas. It’s become one of my favorite blogs to check for new vegan recipes. You should bookmark it!

Serves: Serves 4



1-cup quinoa
1 bag (9-ounces) Beyond Meat Chicken-Free Strips
½-cup vegan bbq sauce
8 cups mixed salad greens and baby spinach leaves
2-cups halved strawberries
½-cup chopped pecans
2 small red onions, sliced


¼-cup to ½-cup vegan bbq sauce (adjust to taste)
4 tablespoons lime juice, or to taste
chopped fresh parsley


Prepare quinoa per directions on the package; set aside and cool completely.
Lightly coat a skillet with cooking spray.
Add chicken and heat for 3 minutes.
Stir in bbq sauce and continue to cook for 2 to 3 minutes, or until heated through.
In the meantime, place salad greens in a salad bowl.
Add quinoa, chicken, strawberries, nuts, and onions over salad greens. Set aside.

Prepare the salad dressing.

Pour bbq sauce into a skillet over medium heat; cook for 30 seconds.
Stir in lime juice and remove from heat.
Add to salad.
Garnish with fresh parsley and serve.
