Fall Burritos with Butternut Squash and Quinoa

With a prep time of only 15 minutes you can have these awesome burritos on the table in a lot less than an hour! Get the recipe below and you could be eating these yummy burritos for dinner tonight.

  • 1tbsp oil
  • 400g butternut squash flesh (around half a medium squash), grated
  • 1 onion, halved then sliced
  • 2 cloves garlic, minced
  • 1tbsp sugar (optional)
  • 80g quinoa
  • Salt
  • Black pepper
  • 2 large flour tortillas (I used herbed ones, but any will do)
  • Handful of fresh spinach, roughly chopped
  • 4tbsp fresh coriander, roughly chopped
