I love the smell of pumpkin spice in the air. It’s especially nice in the fall but I love it any time. These pumpkin spice waffles are the perfect way to fill your house with that beautiful smell for breakfast. Not to mention the delight to your taste buds!
I love several things about this recipe besides the great taste. These are whole grain waffles so they are healthier for you than traditional waffles. And you can freeze them for quick and easy waffles in the future. Just warm them up, add some maple syrup and enjoy. I love anything that is delicious and makes life easier.
These delicious vegan waffles are easy to make and are great any time, not just for breakfast. Hat tip to Cookie and Kate for coming up with this amazing recipe. A quick note for you. To make these vegan you will need to use an egg substitute. I recommend banana or applesauce. About 1 banana or 1/2 cup applesauce should work. It make take slightly more. Just experiment until it’s perfect. And of course use almond milk and coconut oil where recommended instead of milk and butter.
