When you hear the word nugget you may cringe thinking about all of those “food like” creations you see in fast food places. And those entail a lot of animal suffering and worse. But don’t worry these little treats are delicious and cruelty free! You must try these:

Seasoned Crispy Cauliflower Nuggets

Cauliflower from the Latin literally means “Cabbage flower.” It’s no surprise that these little treats from nature are related to cabbage and broccoli. You can see the family resemblance. They are also loved and adored by vegans and vegetarians alike!

You might be surprised to learn that there are hundreds of varieties of cauliflower around the world and 80 varieties in the United States alone. The most popular of these is the white cauliflower. If you do happen to find some orange cauliflower you should try it. It is just as delicious and 25% higher in vitamin A. And the purple variety has a very important substance called anthocyanins.

The beautiful and delicious cauliflower is used in many vegan recipes because of it’s taste and nutritional value. It is a nutrient dense food. Cauliflower is high in folate, vitamin C, fiber and phytochemicals. At the same time it has almost zero fat and no cholesterol.  It’s a guilt free food in every possible way and it is amazing in this easy vegan recipe. You will never think of nuggets the same way again after you try these.

My earliest memory of cauliflower is when I was around 6 or 7 years old. My older sister was mad at me one day for stealing her peach cobbler from her plate at dinner. When mom was away from the table she began to pick up her cauliflower from the plate and start hurling it at my head! I was traumatized by that for years.

The best way I know to get revenge for that fateful day at the family dinner table, as I sat all alone and afraid, is to fight back. I want to eat all of the cauliflower! And with a delicious vegan cauliflower recipe like this, why not?
