Baked sweet potato, Pesto Pasta and Vegan wholesomeness. This is a vegan sweet potato recipe that you can really sink your teeth into and enjoy. It’s full of color, flavor, and it’s very filling. You will love how easy it is to make and how satisfying it is to eat.
Our hats off to Emily from Rawsome Vegan life. She has the most amazing recipes ever and this one is no exception. Nothing is more filling and satisfying than a baked sweet potato and combining it with this perfecta pesto pasta is just genius! This is why we have her vegan cookbook and refer to it often.
If you are looking for a vegan dinner recipe that is full of flavor and will really fill up the entire family then you should give this one a try. It incorporates two of my favorite foods of all time. Sweet potatoes and Pasta. The sweet hearty potato with the light pasta sauce makes for a unique blend of flavors and textures any vegan will love. And your non-vegan guests will too!
You can get the recipe below. Ours is slighted modified from the original we used for inspiration. But you can check out the original as well to see if you prefer it more.
