Apples are a delight to eat most especially if they are crispy and their natural juices get squeezed. I can munch apples all day long. Right now, just thinking about them already makes me want to go to the fruit stand to buy some. One of my favorite things to do is bake things with apple as the featured ingredient.
If I wasn’t eating healthy I would make an apple pie. But when I can’t make a pie, I transform them into a delicious good glass of apple pie smoothie! Nothing beats a dessert in a glass. Smooth, tart, and creamy, it tastes like how an apple pie smoothie should taste like, but there’s more to it than that.
It’s actually even healthier with all the carrots, zucchini, and chia seeds added to it. I was also doubtful at first (carrots and zucchini are not particularly a regular in my apple pies), but when I tasted it for the first time, it was heaven for me. This apple smoothie recipe is amazing.
Makes 2 servings
2 small carrots
1 small zucchini
1 tsp fresh lemon juice
10 Stevia drops
2 Tbsp natural vegan sweetener of your choice (optional)
cinnamon (to your liking)
1 Tablespoon tahini
1 Tablespoon ground chia seeds or flax seeds (for rich thick consistency)
Place chopped apple, zucchini, and carrot in blender with remaining ingredients
Add 1/2 to 1 cup of water
Blend until smooth adding water if needed
Dust top of smoothie with cinnamon, garnish with apple slice
