Do you love tacos? I don’t mean you like to have some occasionally, I mean you could eat them every day. I’m obsessed with vegan taco recipes so I try new ones all of the time just like these vegan beet tacos.
Everyone has their strengths and weaknesses. Tacos are the thing that revealed one of my weaknesses in embarrassing fashion. I love to cook, don’t get me wrong, but I’m not what you would call an amazing chef. Not even close.
About a year ago I was making some vegan tacos and decided I would make my own taco shells. I mean, what can go wrong? As it turn out a lot can go wrong! A woman has to know her limitations and mine are homemade taco shells.
My brother, who is the meanest person in the world to me, tried to get our pet boarder collie “Prissy” to eat them just to demonstrate how horrible they were. Yes they were that bad. And my brother isn’t really mean, I just have to say that, brother/sister code.
You won’t have to worry about making your own vegan taco shells here. This recipe is so quick and easy to make. These tacos so crisp and full of healthy vegan foods that you can feel good about serving it.
I called this recipe vegan beet tacos but it’s really about more than the beets. The beets really do add a great flavor to the taste profile and of course they punch up the color factor. But there are a lot of great flavors that add to the taste of these tacos.
Nearly everything in this recipe is fresh and that’s one of the things I love about it. You can literally feel the infusion of vitamins and minerals when you eat it. When I compare that to the old omnivore tacos I used to eat it’s not even close.
I guess about the only thing in this vegan taco recipe that isn’t fresh is the salsa. You can use any brand you like as long as it’s vegan. If you want to keep everything 100% fresh you could make your own. There’s a great vegan salsa recipe here.
Vegan Beet Tacos
Vegan Beet Tacos Ingredients
1 large avocado (make sure it’s ripe!
1/4 cup salsa (more to your liking, we use this)
3 cups shredded cabbage
2 green onions
Juice from one lime
1 can chickpeas (15.5 ounce)
2 tbsp Mexican seasoning
1 Bell Pepper
S&P to taste
8 Vegan tortillas
- Shred your cabbage. Divide into 2 1/2 cups, and 1/2 cup
- Chop the onion
- Drain and rinse your Chickpeas
- Peel the beet and grate it (or spiral it)
- Slice bell pepper (remove seeds)
Vegan Beet Tacos Preparation
- Mash the avocado in a bowl along with salsa and lime juice. Taste
to make sure you have the amount of salsa you like.
- Add S&P and toss 2 1/2 cups cabbage, and onions
- Stir in the seasoning and chickpeas
- Mix in all of the beets and bell pepper (or save some back as a topping)
- Fill tortilla shell with taco mix
- Top with more cabbage (beets and bell pepper too if you choose)
