They are mixed and shaped in beautiful flat layers of vegan goodness. Then cashews, coconut oil, maple syrup, vanilla and lemon juice were blended until completely smooth and perfect as a frosting. Finally it’s topped with unsweetened shredded coconut. It’s unreal. It looks really good and the carrot cake is delectably stacked.
