I don’t think there is anyone that doesn’t love a great sandwich. Being vegan really adds to the allure of the simple sandwich because we eat so many great things. Omnivores stick with meat and cheese. Vegans will toss an incredible variety of things on a sandwich and the possibilities are endless.
This recipe starts out with smashed chickpeas. The you add in some roasted sunflower seeds, mustard, red onion, and dill and you’re on your way to a sandwich feast fit for a queen. When you pile all of that on top of hearty, toasted wheat bread with tomato, lettuce, and a drizzle of garlic you really have something special.
The various textures and flavors combine to make a crunchy, soft, and creamy sandwich you will never tire of eating. I’d say you could eat this beauty for lunch a couple of times a week and still be excited about seeing it in your lunch bag at the office.
