I’ll admit that chili is a guilty pleasure at our house and I never tire of learning new ways to make it.
You never know where you will be inspired with great vegan recipes. This one comes from redditor HurrayHurrayHurray who also supplied the beautiful photo of the finished dish. It’s pretty simple to make. In fact you can make the entire vegan recipe in just a matter of minutes. All you need are a few ingredients and a little bit of time and patience. This is such a simple recipe.

1/2 Sweet Potato
1/4 Green Bell Pepper
1/4 Red Bell Pepper
1/2 C Corn
1/4 Cup Amy’s Chili
2 Summer Squash
Cook the sweet potato in the microwave
Stir fry peppers onion and corn
Prepare Amy’s Chili per directions on package
Steam or pan sear Squash to your personal taste
Mix Chili with all other loose ingredients and then cover Sweet potato. Server with Squash
