I know that I probably had you at ‘chocolate.’ Or maybe it was a combination of vegan and chocolate. Either way I can feel you on this one. How much chocolate is too much chocolate? I haven’t reached that point yet so I don’t know!
You can make these vegan chocolate waffles and they will be delicious no matter what you top them with. For chocolate overload you can make the chocolate syrup. Fresh fruit is also great on these. My favorite topping is probably peanut butter. So good!
Vegan Chocolate Waffles
Chocolate Waffles Ingredients
1/3 cup + 1 tbsp plain flour
1 1/2 tbsp unsweetened cocoa powder
1 tsp baking powder
2 tbsp applesauce
1/2 cup non dairy milk of your choice
1 tsp vanilla
2 tsp maple syrup (or sweetener of your choice. also optional)
Directions
Preheat your waffle iron and lightly grease with oil.
Mix ingredients in a medium mixing bowl until combined
Batter will be thick and a couple of lumps is ok
Spoon waffle batter into your waffle iron filling per manufacturer instructions
Cook for 4-6 minutes or until crispy on the outside. This varies a lot depending on your waffle maker.
Using a knife or spatula to pop the waffles out.
Serve with fresh fruit toppings or get really chocolate crazy and try chocolate syrup.
Chocolate Syrup recipe
1/4 cup melted coconut oil
1/2 cup of non dairy milk
1/2 cup maple syrup
1/2 cup cocoa powder
Instructions
In a small saucepan, combine the coconut oil, milk, and maple syrup. Stir and bring to a very gentle simmer.
Slowly whisk in the cocoa powder and continue to cook on a low simmer for about 3 minutes. Remove from heat.
Let cool for a few minutes
Pour over ice cream, pancakes, waffles, and more!
