Everyone in my circle of friends love Vegan Eggplant Parmesan. Except my friend Alicia.
I still love her but I think something is wrong with her. Maybe she was accidentally dropped on her head as a child. That’s what I tell her anyway and then she gives me this look. I’m not sure how to describe the look but it’s scary. Thankfully I know she loves me so she won’t hurt me! At first I thought it was because she didn’t like red sauce. But she loves pizza. She loves pasta with red sauce like lasagne. If I was paranoid I’d think she just didn’t like my cooking.
Despite the objections from my friend Alicia I still serve Vegan Eggplant Parmesan about once a month when my friends and I get together. We have this tradition where we all hang out at one persons house and the host prepares a vegan feast. One of my go to feast is this meal. Everyone loves it! My version of Vegan Eggplant Parmesan is baked. I much prefer it over the fried variety and it’s much healthier. I got inspiration for my recipe from Vegan Yumminess so I want to give them credit!
