Vegan Marshmallow Cream Fluff

I remember the first time I learned that Marshmallows were not Vegan. My heart sank. Visions of some of my favorite desserts faded. The good news is you can make a vegan marshmallow cream that is amazing. It’s also pretty easy to make.

I’ve seen a couple of vegan marshmallow products out there but they just don’t seem right. Especially for making a traditional marshmallow cream fluff! You know the stuff. It’s all light, and airy, and sweet, and delicious! One of my favorite cakes uses it as an icing!

Yummy! If you want to know how to make a vegan version of marshmallow cream fluff, then look no further. The recipe below is easier to make than you might think and it’s so delicious. Yummy, light, fluffy, vegan marshmallow cream. Sure, this isn’t the healthiest vegan food in the world but it sure is delicious.

Vegan Marshmallow Cream Fluff

(adapted from a recipe at Seitan Is My Motor. Make sure you check their site out!)

Ingredients
1/2 cup chickpea brine, drained from a can of chickpeas
1/2 tsp guar gum
1/8 tsp cream of tartar
1/2 cup powdered sugar (organic vegan only!)
2 teaspoons organic vanilla

Instructions

In a large bowl mix brine, guar gum, and cream of tartar

Use a hand held mixer to beat for about 2 minutes. Until the result is like lightly beaten, whipped egg white

Add the sugar and vanilla and beat on high until the mixture is stiff. About 5 minutes.

  1. While I can’t imagine how this will taste using chickpea brine, I am going to give it a try sometime. It is amazing how some things don’t sound like they’d possibly taste good, they usually turn out great! I am thankful that 4 years ago, I stopped doing the SAD to following a healthy vegan diet, it’s been awesome & my health is now amazing :)!
