Vegan Nachos, Low Fat, Oil Free, Gluten Free

It’s time to make these amazing vegan nachos. No that is not a typo or misprint. I’m talking about amazing vegan nachos that are low fat, oil free, and gluten free. This is an amazing recipe that we like to pile high and devour it.

One tip to make it even better? We like to use fresh tomatoes. The recipe calls for canned tomatoes which is fine. Maybe do it that way the first time. But make sure you make this with fresh tomatoes at least once. You will thank me for it.

Vegan Nachos, Low Fat, Oil Free, Gluten Free

 

Vegan Cheese Sauce:

2 cups diced potatoes
1 cup diced carrots
1/4 cup diced onion
1/2 cup nutritional yeast
1 tsp garlic powder
1 tsp dried onion flakes
1/2-1 cup of water from the pot
1/3 cup plant based milk
Juice from 1/2 a lemon
Salt to taste

Vegan Salsa:

1 can diced tomatoes
1 minced garlic clove
1/4 cup finely chopped onion
1 tsp chilli flakes
1/8 tsp chilli powder
1 tbsp tamari
1 tbsp lemon juice

Tofu Crumble:

250g (or half a block) of firm tofu
1/2 packet of “Mexican seasoning”
marinate and bake until crisp

Guacamole Dip:

1 avocado
2 tbsp lemon juice
Top with rinsed and cooked black beans, green onion, and extra lime juice
