My appreciation for breakfast at night came from many years ago with my father. For some reason he suggested we have pancakes and sausage one night at around 10:00pm. (no we were not vegan all those years ago) I remember us laughing and having the most fun that night making the pancake batter and cooking breakfast late at night. Ever since then eating breakfast late is something that brings a smile to my face. Of course pancakes are good any time of day, morning or night.
Not only are these pancakes vegan and delicious, they are also gluten free. They are 100% whole grain and they are so easy to make you can do it in a blender. The ingredients are super simple, the preparation time is almost zero and they come out tasting more amazing that you can imagine. Of all the pancake recipes I love and that I have shared on this website, these may be my favorite.
I adapted this recipe from one that wasn’t vegan and honestly, this vegan version taste even better! I’ll give you the scoop on the original recipe as well as my vegan version on the next page. And you want to have breakfast at 8:00pm you go right ahead. You have my permission.

1 cup old-fashioned oats
1 cup apple sauce
1 banana (1/2 may be even better for you it depends)
2 tablespoons coconut oil
1 tablespoon baking powder
1 teaspoon maple syrup
1 teaspoon vanilla extract
½ teaspoon salt
½ teaspoon ground cinnamon
1 cup grated honeycrisp apple
