Vegan Red Velvet Cake

This Vegan Red Velvet Cake is pretty, delicious and healthy! What more can you ask for? I have loved red velvet cake for as long as I can remember. My grandmother used to make them and they were amazing. But they were not vegan. But this great vegan cake recipe is vegan. So enjoy some vegan red velvet cake.

The first thing you’ll notice with this cake is its incredibly beautiful appearance. The nice bright red hue that you’re looking at is not made from artificial food coloring, but by the awesome natural color that the beets make. Not only this recipe skipped the bad food dyes, it provides anti-inflammatory, antioxidant and detoxifying properties.

This is also gluten-free, vegan, and free of refined sugar. Plus, it contains vegetables!  The icing looks fabulous covering the entire surface of the cake. You wouldn’t believe that rich and creamy topping spread generously on the soft and spongy goodness is made from coconut milk with some beet juice to make the base slightly pink. This cake is so good; you’ll feel like it’s your birthday every day!

These photos and recipe are a masterpiece of Loving It Vegan. You can get the recipe for this Vegan Red Velvet Cake here.
