Vegan Red Velvet Pancakes w/cream & berries
Who would have ever imagined to use beets in a pancake recipe?!?! The genius mind over at Fragrant Vanilla Cake, that’s who! Give this recipe a try and enjoy something different in the kitchen. It’s a bit unorthodox but it is very tasty and like nothing you’ve ever eaten before!
Vegan Red Velvet Pancakes
Ingredients
Pancakes:
1 cup whole wheat pastry flour
2 tsp baking powder
1/2 cup pureed cooked beets*
1 1/4 cups coconut milk
2 tsp pure vanilla extract
1/4 tsp sea salt
1 Tbsp maple syrupCream:
1 cup full fat coconut milk chilled until very cold (only the thick part from the top of the can)
1 Tbsp maple syrup
2 tsp pure vanilla extract
coconut oil for cooking pancakes
2 cups fresh berries for serving
maple syrup for serving
