Vegan Spaghetti with Squash, Chickpeas and Kale
As a child, I’ve always loved squash. I also had a friend who shared the same love for squash. Why did we love squash? Well, if you ask me that when I was still nine years old, I would simply say that because I find it delicious. If you ask my friend, she would also say the same.
However, if you ask me now, my friend and I would have an additional answer. We love squash right now because it has vitamins A & C which are good for the eyesight and immune system respectively. Squash also has vitamin B complex and other minerals that contribute to the overall health of the human body. I’m always looking for creative ways to include squash into my meals and this is a very creative and unique way to to it.
If you are a pasta lover then you probably have your favorite ways of preparing it. And if you are like me you really don’t want any0ne messing around with your ‘world class vegan spaghetti’ recipe! I know that’s how I am. I actually have a few favorites I like and this vegan spaghetti recipe is now added to the list. You not only get the addition of some rich complex flavors that takes everything up a notch, you also get more nutrition.
If you are looking for something other than the usual vegan salad or the stir-fry style you should definitely try this recipe. You get a nice pasta recipe for that burst of energy to keep you going. And you get some added nutrition thrown in there as a nice little extra benefit. After all, going vegan is supposed to be partly about better nutrition and health right?
