Vegan Pizza With Roasted Garlic Sweet Potato Crust

This delicious vegan pizza is crunchy on the outside and soft on the inside and with perfect balance of sweet and savory. The edges come out of the oven golden brown and the toppings are the perfect blend of pizza flavors. This is a vegan pizza to fall in love with.

Vegan Pizza With Roasted Garlic Sweet Potato Crust

2 C pureed sweet potato (takes about 2 large sweet potatoes)
1 garlic bulb
1 Tbsp chia seed
3 tbsp water
1 1/4 C oat flour, gluten free
1/4 C almond flour
1 tbsp olive oil
1 tbsp ASV (apple cider vinegar)
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon salt
enough olive oil to drizzle
Pizza sauce and toppings of your choice

How to make the roasted potato and garlic

Preheat your oven to 400F

Stick a fork in your sweet potatoes several times all around
Put them on a parchment line baking sheet
Slice the top of of the garlic bulb so that each clove is exposed
Drizzle with some olive oil, wrap in tin foil, place on sheet with potatoes
Bake for about 45 mins or until tender
Remove to cool

How to make the crust

Put chia seeds in bowl with water until it gels like an egg (10 mins approx)
Skin the potatoes, remove garlic cloves, and place out in a bowl
Mash both with a fork until smooth
Add almond meal, oat flour, ACV, olive oil, basil, oregano, and salt. Stir in well
Add chia egg and combine well

Use parchment paper to line a pizza pan
Spread mixture in the pan evenly to pizza shape.
Cook for about 30 minutes at 400F until dough sets
Remove from heat and add your sauce and toppings

Cook until your toppings are heated and the crust edges are golden (about 10 mins)
