This Vegan Sweet Potato Spinach Gnocchi has added level of texture that makes it really stand out. It is crispy on the outside, but soft and pillow-like on the inside. And it’s paired with simple, super flavorful fresh garlic and tomato sauce.
Like many vegan dishes, this version of gnocchi is incredibly appealing, tasty and healthy. Most gnocchi recipes are processed. The thick, soft dough used in original recipes are usually made from egg and with artificial flavorings. But you make this vegan style and you will realize that it is even better. You can purchase ready-made gnocchi from stores, but why do that when you can make it at home?
I think that this from-scratch recipe looks prettier than the original. It looks really great! These are baked so the exterior are wonderfully crisp. Another great thing about this dish is that it requires few ingredients. The best way to make it is by using sweet potato, finely chopped spinach, almond meal, arrowroot powder, fresh tomatoes, vegan white cooking wine, and fresh basil. The sweet potato looks soft but not mushy. The tomato sauce sounds perfect and looks delicious. Served with small handful of basil on top, these peppery and slightly minty garnishes take the food to the next level.
