As I’m writing this article is is the middle of winter. Fortunately it’s been a mild winter but I am so ready for spring to arrive. Being in this state of mind yesterday prompted me to look for a good spring recipe. I settled on these vegan spring rolls.
Most of my friends love spring rolls as much as I do but they treat them as an appetizer. Not me! I don’t think you can find a much better vegan meal than chowing down on some vegan spring rolls for lunch. If I had any shame I’d feel bad for how many I can eat in one sitting.
You don’t have to be a person who devours and entire plate of vegan spring rolls in one sitting to enjoy this recipe. Make them as appetizers, a snack, or just a delicious lunch for your family. Or be like me and keep them all to yourself.
Of course this recipe uses rice paper rolls as you would expect. The real star is the tofu which is seasoned in a Tamari, Maple Syrup, Sesame Oil, Garlic, Cornstarch and Rice Vinegar marinade. The flavor and texture of the tofu in these spring rolls is incredible.
