Before I went vegan I loved loaded potato skins. I won’t name the restaurant that served them but we were there a lot of weekends. I don’t have to tell you that not only were they not vegan, they weren’t healthy period. The several glasses of beer I had with them didn’t help either but we won’t talk about that!
The sweet potato skins are made with roughly chopped fresh cilantro, peanut butter, chili sauce and scallions. It’s a simple list of ingredients which is so simple anyone can make and enjoy this easy vegan recipe. The secret is in the sauce though.
The chili sauce gives the heat and zip with a light clean taste. If that doesn’t get you excited, I don’t know what will. These little babies are just too stunning. I could cook them up and eat them just like that but if you’re trying to impress some guest, garnish with roasted peanuts to complete the dish.
