I see so many amazing vegan Thanksgiving recipes and I want to eat them all. That’s what I first thought when I saw this Vegan Thanksgiving Loaf recipe. Why can’t we have a big holiday meal once every month?
How incredible does this beautiful vegan holiday recipe look? I was planning on doing a seitan turkey recipe this year for Thanksgiving dinner but now I’m reconsidering. This vegan loaf looks so amazing it’s really hard to resist cooking it right now. Honestly I think I may cooking it this week “just to make sure it’s ok.” You know what I mean. And you can see how much I love vegan food.
How can you say no to a vegan Thanksgiving loaf that is this beautiful, delicious and full of healthy ingredients. Can you believe this recipe has brown rice, lentils, kale, carrots, celery, mushrooms, flax seed, walnuts and cranberries in it? That is like a “who’s who” of nutrient rich vegan foods! And they are all rolled up into this incredible vegan Thanksgiving recipe.
Of course it would be suitable for Christmas or the middle of May too. But it really looks more like a vegan holiday meal recipe to me.
