Honestly I find that most vegans don’t miss recipes made with eggs. Maybe desserts because you don’t really see or taste the egg in them. But a lot of my vegan friends have no interest in eating an omelet. I am not one of those vegans. I was super excited to find this awesome vegan recipe so I could enjoy omelets for breakfast again.
This recipe is made with savory chickpea flour batter and stuffed with sautéed broccoli, peppers and onions. This nutritious vegan food is incredibly filling and it does a good job replicating the eggs. You wouldn’t believe the texture and taste could be so satisfying but it really is.
This vegan omelet has the perfect consistency and the veggie filling is full of beautiful, perfectly cooked vegetables. The really great thing about this recipe is that you can customize it however you like. Want to make it a southwest omelet? Add in some peppers to spice things up.
Maybe you don’t like peppers but you’d prefer to have some broccoli and spinach in there. No problem. You can pretty much mix and match any blend of vegetables to make your little omelet loving heart content. For me personally, I don’t like the peppers so much so I leave them out.
